Delicious, Delightful and Deliriously Easy!
When we were in State College recently, we were lucky to stay with Cassandra and Jimmy. Why, here's Cassandra now!
And here's where we dined on Cassandra's Most Excellent Granola every morning - in this beautiful sun room. Seriously, it's a wonder we ever left!
Mix together
1/3 cup maple syrup
1/4 cup vegetable oil
3/4 teaspoon salt
add
3 cups of quick oats
1 heaping cup slivered almonds
1 heaping cup cashew pieces
1 heaping cup raisins
3/4 cup shredded coconut
1/4 cup dark brown sugar
Stir it up and spread on the biggest sheet pan you've got. (Cassandra uses 2 pans, but we've got a rinky dinky apartment sized oven, so 2 pans isn't an option for me. So I used the largest pan I had.)
Cook at 250 degrees for 1 hour and 15 minutes, stirring every 15 minutes.
Allow to cool completely before storing.
Serve with a big ol' dollop of yogurt. Now THAT'S the way to start your day!

Mister Man said the slop tastes delicious. I think he's just being kind.
Though I did appreciate his voice a few moments ago. As the granola is baking, our apartment is filled with the scent of roasting oats, maple syrup, nuts and brown sugar. And from the living room, he called out "Oh - it smells so good. I can hardly wait until the morning!" Bless his little socks.
