Lemon-Lime Sherbet (a la David Lebovitz)

There is only one phrase that can be used to describe this sherbet: delightful and refreshing! (and that utterance DOES include the exclamation mark). David Lebovitz didn't add the lime, but I had a bunch on hand, and really, there is nothing more fantastic than something that's sweet and limey on a warm day. In fact, right now I am thinking about those lime Popsicles from childhood, and my mouth is watering. I wonder if 7-Eleven delivers at 1:43 a.m.??

If you lean right into the computer and peer at these photos, you will see lovely little zippy bits of lime and lemon zest. Imagine how lovely that would taste about now. This recipe is SO stinkin' easy, you'll kind of scratch your head in wonder at the end of it!

3 cups whole milk
3/4 cups sugar
1 lemon
5 tablespoons freshly squeezed lime juice
2 tablespoons freshly squeezed lemon juice

In a medium, nonreactive saucepan, mix 1 cup of the milk with the sugar. grate the zest of 1 lemon and 1 lime directly into the saucepan. Heat, stirring frequently until the sugar is dissolved. Remove from the heat and add the remaining 2 cups milk. then chill thoroughly in the fridge. Stir the lemon and lime juice into the milk mixture, and whisk vigorously. Freeze in your ice cream maker according to the manufacturer's instructions.
